Strawberry Oatmeal Bars

It still feels like summer here in Columbus, Ohio, so I figured I’d whip up one more summer recipe before switching to full-on pumpkin-everything-mode! While these strawberry oatmeal bars pair perfectly with some sunshine and patio furniture, you can enjoy them anytime of the year by using frozen strawberries. I hope you try out this recipe and love these bars as much as I do!



  • 1 cup gluten free flour mix
  • 3/4 cup rolled oats
  • 1/2 cup coconut oil, melted
  • 1/4 cup pure cane sugar
  •  1/4 tsp salt
  • 3 cups frozen sliced strawberries
  • 1/4 cup pure cane sugar
  • 2 tbsp lemon juice
  • 2 tsp arrow root powder


Preheat oven to 350ºF and spray a 9-inch square pan with cooking spray. In a large bowl, stir to combine flour, oats, coconut oil, 1/4 cup sugar, and salt. Set aside 1 cup of the oat mixture. Pour remaining oat mixture into 9-inch square pan and pack the mixture down using a spatula. In a large bowl, stir to combine strawberries, 1/4 cup pure cane sugar, lemon juice, and arrow root powder. Transfer strawberry mixture over the crust in the 9-inch square pan. Sprinkle the 1 cup of oat mixture that you set aside earlier on top of the strawberries. Bake for 60 minutes. Enjoy!
