These turkey meatballs are so simple and definitely hit the spot on a chilly evening! Mix them up, pop them in the oven, then prepare the zucchini and tomato sauce while they’re baking. All of my favorite meals can be made in under 30 minutes! I love to cook and bake, but I love hanging out with my family and enjoying the food with them even more!
- 1 lb ground turkey
- 1/4 cup parmesan cheese
- 1/4 cup gluten-free panko bread crumbs
- 1 egg
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 large zucchini
- Tomato sauce (my recipe from my GF pizza post!)
- Fresh basil
Preheat oven to 400°. In a mixing bowl, combine ground turkey, parmesan cheese, bread crumbs, egg, salt, and pepper. Shape meat into rounds and space evenly on a baking sheet. Bake meatballs at 400° for 20 minutes. While baking, spiralize the zucchini and make tomato sauce from my pizza post. Heat the zucchini briefly in a sauce pan on medium heat. Enjoy the meatballs on top of spiralized zucchini and topped with tomato sauce and fresh basil.
