Celebrate this Galentine’s day with your gal pals with a cookie decorating party! These sugar cookie cut-outs are so delicious and work really well with the gluten free flour blend. My favorite is by Namaste foods, and I find it at Costco. You can either decorate with homemade icing or buy some from the store. I used Simple Mills icing that I purchased from my local Whole Foods! Don’t forget the fun sprinkles and dyes to decorate your yummy creations. Enjoy!
- 2 1/2 cups gluten free flour blend
- 1 tsp baking powder
- 1/2 tsp salt
- 3/4 cups butter, softened
- 1 cups granulated white sugar
- 2 eggs
- 1/2 tsp vanilla extract
In a large mixing bowl, combine flour blend, baking powder, and salt. Set aside. Soften butter in microwave. While butter is softening, place sugar, eggs, and vanilla in a separate large mixing bowl. Add softened butter and mix with a beater until combined. Slowly add in and stir flour mixture into wet mixture. Beat in as much as you can with the mixer and then stir in the remaining flour. Cover dough and set in fridge for at least 30 minutes. Preheat oven to 400°. Roll out dough to 1/4″ thick and use heart shaped cookie cutters to cut dough. Lay cookies out evenly spaced on a baking sheet. Bake 6-8 minutes. Allow cookies to cool before icing with homemade or store bought icing.
