PB&J Thumbprint Cookies

If your sweetie loves peanut butter and jelly sandwiches, then this is the perfect treat to bake for them this Valentine’s day! I’ll be posting lots of other yummy sweet treats to help you celebrate Galentine’s and Valentine’s day this year. Stay tuned!

  • 2 cups gluten free flour blend
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup peanut butter, creamy
  • 1 cup maple syrup
  • 1 egg
  • 1 tsp vanilla extract
  • Strawberry jam or preserves


Preheat oven to 350°. In a large mixing bowl, stir together flour blend, baking soda, and salt. Add peanut butter, maple syrup, egg, and vanilla extract. Using a hand mixer, beat all ingredients together. Line a baking sheet with parchment paper. Using a tablespoon, scoop bowl and roll into balls. Place 12 balls on baking sheet about 2 inches apart. Using your thumb, press an indent into the center of each dough ball. Fill each thumbprint with about a scoop of strawberry jam or preserves. Do not over flow. Bake at 350° for 12-14 minutes. Yields 3 dozen cookies.
