Chocolate Pretzel Protein Cookies

Looking for something to satisfy your sweet tooth without totally breaking your new years resolutions? Look no further! This recipe is for a healthier cookie to help you curb that craving and stay on track! I wanted something sweet and salty, so I decided to recipe test some sort of pretzel and chocolate combo. This was the result:

  • 1 cup gluten free flour blend (my favorite is Namaste)
  • 1/2 cup chocolate protein powder (my favorite is Orgain)
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup coconut oil, melted
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1/3 cup unsweetened almond milk
  • 1/4 cup mini chocolate chips (my favorite are Enjoy Life)
  • 1/4 cup crushed gluten free pretzels (my favorite are Glutino)


Preheat oven to 375°. In a mixing bowl, combine flour, protein powder, baking soda, and salt. Set aside. In a microwave safe bowl, melt coconut oil for about 30 seconds or until fully melted. Add coconut oil, vanilla extract, egg, and almond milk to the flour mixture and stir to combine. Add mini chocolate chips and pretzels, stirring in to evenly distribute in the dough. On a parchment paper lined baking sheet, scoop dough and roll into balls of whatever size you desire! Make sure they’re all roughly about the same size. Bake at 375° for 5-8 minutes. Enjoy!
