Baked Rosemary Carrot Fries

These delicious carrot fries are super simple and a healthy alternative to normal french fries! Roasted vegetables plus rosemary is the way to my heart. Dip these babies in some ketchup as a snack or eat them along side your favorite meals. I’d love to see what creative meals you’re eating these with! Maybe with ground turkey burgers or pan-fried tilapia. The possibilities are endless!

Ingredients:

  • 1 lb whole carrots
  • 2 Tbsp olive oil
  • 2 tsp rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper

Directions:

Preheat oven to 425°. Rinse, peel, thinly slice, and cut in half all carrots. Use a paper towel to pat dry the carrots. Line a baking sheet with tin foil. Put carrots on the sheet in a single layer. Drizzle olive oil on top of the carrots and sprinkle them with the rosemary, salt, and pepper. Use your hands to mix around the oil and spices to evenly coat all of the carrots. Bake at 425° for 15-20 minutes.
