Soft Ginger Cookies

I’m already missing the holidays, so I decided to whip up a batch of soft ginger cookies! It still feels like winter here in Ohio (and there’s still snow on the ground!), so I haven’t yet taken down my snowmen ornaments or my greenery. They’re just so festive! Plus, it’s supposed to snow again this weekend! Let me know if you try out these cookies, or save the recipe for next holiday season.

Ingredients:

  • 1 1/4 cups gluten free flour blend
  • 1 teaspoon ginger
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • pinch of salt
  • 1 egg
  • 1/2 cup coconut oil, melted
  • 1/2 cup coconut sugar
  • 1/4 cup maple syrup

Directions: 

Preheat oven to 350°. In a mixing bowl, stir to combine flour, ginger, baking soda, cinnamon, nutmeg, and salt. Mix in egg, melted coconut oil, coconut sugar, and maple syrup. Scoop heaping tablespoons of dough and roll into balls. Even space balls of dough on a parchment paper lined baking sheet. Bake at 350° for 8-10 minutes.
