Taco Bowl

Don’t have dinner plans yet? Celebrate taco Tuesday with my delicious taco bowls! To save time, you can replace the homemade salsa with chopped tomatoes. To make them even more delicious, you could swap the smashed avocado for my low FODMAP guacamole recipe! So many yummy options. Happy Tuesday!

Ingredients:

  • 1 cup cooked quinoa
  • 1/2 lb ground turkey
  • 2 tsp olive oil
  • 2 tsp Trader Joe’s chili lime seasoning
  • 2 tsp chili powder
  • 2 cups chopped lettuce
  • 1 green pepper
  • 1 tsp olive oil
  • 1 avocado
  • 2 tsp chopped green onion
  • Salsa for topping

Directions:

Cook 1/2 cup of quinoa according to packaging, yielding 1 cup of cooked quinoa. Chop 2 cups of lettuce and set aside. Cook ground turkey in olive oil, chili lime seasoning, and chili powder on medium heat on stove top until fully cooked. Thinly slice green pepper and sauté in olive oil on medium heat on stove top. While turkey and green pepper are cooking, prepare salsa, chop green onions, and smash avocado. Divide lettuce, quinoa, turkey, salsa, and green beans between two bowls. Top each bowl with 1/2 smashed avocado and chopped green onions. Serves two.
