When I was little and we would have a snow day, my brother and I would spend the whole day outside with our neighborhood friends building snowmen, having snow ball fights, and sledding. At the end of the day, my mom would always make us delicious hot chocolate to warm up with after a cold day in the snow. With my IBS, I find it harder and harder to find hot chocolate mixes that I can enjoy without setting off my symptoms. I wanted to create a homemade hot cocoa recipe that was simple and could be enjoyed by those of us who can’t have dairy. This could of course be made with any kind of milk! Dairy, almond, cashew, coconut, etc. Whatever your heart desires and your tummy will tolerate!
- 1 cup unsweetened almond milk
- 1 tsp unsweetened cocoa powder
- 2 tsp pure maple syrup
- 1/2 tsp vanilla extract
Combine all ingredients in a sauce pan and place on medium heat on stove top. Whisk ingredients together until combined. Remove from heat once liquid has reach desired temperature. Pour into a mug and enjoy!
