Pumpkin Spice No Bakes

I’m still not quite ready to say goodbye to fall! I love pumpkin; I eat it all year round. Fun fact/tip- so does my dog! Pure pumpkin puree can help ease an upset tummy, so I add a spoonful to my pooch’s food whenever he has diarrhea or gets sick. He loves the taste, and I love that it makes him feel better! Back to the recipe… these simple no bakes take no time at all and store wonderfully. They’re a sweet treat to have throughout the week, or you can bring them to your next holiday gathering.   • 1 cup coconut sugar
  • 1/4 cup almond milk
  • 1/4 cup coconut oil
  • 1 tsp pumpkin pie spice
  • 2 cups oats
  • 1/4 cup almond butter
  • 1 tsp vanilla extract


In a saucepan, bring sugar, milk, and coconut oil to a rolling boil. In a mixing bowl, place oats, almond butter, and vanilla extract. Pour liquid mixture from saucepan over oats, almond butter, and vanilla in mixing bowl. Stir until combine. Scoop tablespoon-size rounds on to parchment paper. Allow to cool over night. Yields about 2 dozen. Store in a tupperware.
