Maple Oat Muffins

There’s still time to savor the flavors of fall with these yummy Maple Oat Muffins! I just love to bake this time of year. Baking for my friends and family is one of my favorite things to do, and the holidays are the perfect time for just that! I made these muffins with warm sweaters, fuzzy socks, and cozy morning cups of coffee in mind. Enjoy warm with a little melted ghee or maybe even dunk them in your coffee or hot cocoa! Ingredients: 

  • 2 cups gluten free flour blend
  • 1 cup gluten free oats, pulsed in food processor
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 egg
  • 1 cup coconut oil, melted
  • 1 cup pure maple syrup
  • 1/2 cup almond milk

Directions:

Preheat oven to 375°. In a medium bowl, mix flour, pulsed oats, baking powder, and salt. In a separate bowl, combine egg, coconut oil, maple syrup, and almond milk. Slowing stir dry mixture into second mixing bowl. Divide batter evenly between 12 lined muffin tins. Bake for 25-30 minutes at 375°.
