Very Berry Popsicles

These refreshing, summertime treats are super simple and sure to help you beat the late summer heat! You will need popsicle molds, or you can get creative and make your own out of paper cups and wooden craft sticks. To begin, I blended the strawberries and almond milk together and filled each of the molds halfway with the strawberry mixture. I placed the molds into the freezer for about 30 minutes to allow that layer to harden, and then I blended the blueberries and almond milk together and layered it on top of the strawberry mixture in each mold. To freeze the strawberry slice into the popsicle to make them even more beautiful, I held a strawberry slice to the side of the mold with a toothpick while I poured in the blueberry mixture. I love the way the slices turned out! These popsicles are naturally sweet from the fruit, but you could add some drops of pure liquid stevia to sweeten them up a bit without adding any sugar!

Ingredients:

  • First layer
    • 1 cup of frozen strawberries
    • 1 cup of unsweetened almond milk
  • Second layer
    • 1 cup of frozen blueberries
    • 1 cup of unsweetened almond milk
