Sweet dreams are made of these delectable pancakes! Nothing says Sunday morning quite like a fat stack of gluten-free pancakes drizzled with almond butter. Pamela’s gluten free pancake mix is by far the best GF pancake mix I’ve found at grocery stores near me. It’s easy to bake with, reasonably priced, and delicious. Their original pancake recipe is awesome, but I like to shake things up! I love nutmeg, and I like to sneak it in recipes to spice things up a bit. Whip up a batch of these for your next Sunday brunch, and top them with anything your heart desires! My heart desires almond butter drizzle and berries. Yum!
- 1 cup Pamela’s gluten free pancake mix
- 1 egg
- 1/2 cup almond milk
- 1 tablespoon coconut oil, melted
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
In a mixing bowl, stir together all ingredients until combined. Bring a pan to medium heat on the stove top. Once heated, oil the pan with oil of your choosing (I like to use coconut oil). Pour a pancake size amount of the batter onto the pan. When the batter starts to bubbles, flip your pancake. Remove from heat once cooked through. Repeat until you’ve cooked all of the batter. Serves 2-4. Makes about 6-8 pancakes.
