Unrolled Sushi Bowl

Craving sushi, but don’t want to spend the money? My unrolled sushi bowl is a great solution! We eat this for dinner almost weekly at my house. The ingredients are simple, fresh, and filling. I like to use quinoa for the base to add a little more protein and fiber, but you could make this with any type of rice as well if you prefer.

Ingredients:

  • 1/4 cup mayo

  • 2 teaspoon lime juice

  • 1 teaspoon distilled vinegar

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 1 teaspoon chipotle chili pepper powder

  • 1 diced chile in adobo sauce

  • 8 oz imitation crab meat, diced
  • 1 cup cooked quinoa
  • 1/2 cup cucumber, seeded and diced
  • 1/2 cup shredded carrots
  • 1/2 avocado, diced
  • 2 tablespoons toasted sesame seeds
  • 2 tablespoons green onions, chopped

Directions: 

In a bowl, combine mayo, lime juice, distilled vinegar, salt, pepper, chipotle chili pepper powder, and diced chile. Once combined, add diced imitation crab meat and stir until covered. Set aside. In two bowls, divide and layer the cooked quinoa, cucumber, carrots, and avocado. Divide the crab meat between the two bowls. Top bowls with sesame seeds and green onions. Enjoy with coconut aminos or sliced ginger!
