If you’re anything like me (super cool, loves to eat healthy, but also has an insatiable sweet tooth) then you’ll LOVE these no bake cookies! They’re simple, sweet, and scrumptious. My husband has three younger cousins on his mom’s side that love dessert even more than I do (if you can believe that), and they loved this recipe, too! I sent the recipe over to their mom, and she couldn’t believe that the ingredients were so clean and healthy. No bakes are much more convenient than regular cookies because you don’t have to deal with the baking, but these do have to set and cool over night (although taste-testing pre-cooling is recommended and encouraged!)
Ingredients:
- 1 1/2 cups coconut sugar
- 1/2 cup coconut oil
- 1/4 cup cocoa powder
- 1/2 almond milk
- 3 1/2 cups oats
- 1/2 cup peanut butter (or your favorite nut butter)
- 2 teaspoons vanilla extract
Directions:
In a saucepan, bring sugar, oil, cocoa powder, and milk to a rolling boil. In a large mixing bowl, place oats, nut butter, and vanilla extract. Pour mixture from saucepan into large mixing bowl, and stir to combine with oats, nut butter, and vanilla. Scoop spoonfuls of dough on to parchment paper-covered cookie sheets. Allow cookies to cool until set. Enjoy!
