Onion- and Garlic-Free Guacamole

FullSizeRender (2)When I first started following a low FODMAP diet, my IBS symptoms improved immensely! I was so happy with my progress that I didn’t dare venture away from the diet. Now that I’ve been following a low FODMAP diet for two years, I’ve realized how much I have truly missed Mexican food! I’ve missed enjoying guacamole and chips, so I knew I had to create a low FODMAP version of my favorite chip dip. Well, drum roll please, because here it is! This guacamole recipe is so fresh and yummy, you’ll have yourself wondering why you didn’t make a double batch. Serve with chips as an appetizer, as a side with tacos, or on top of your favorite salad.

Ingredients:

  • 2 avocados, diced
  • ½ tomato (from vine), seeded and diced
  • ½ jalapeño, seeded and diced
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh cilantro, chopped
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh squeezed lime juice

 

Directions: 

Dice avocado, seeded tomato, and seeded jalapeño. Combine in mixing bowl with all other ingredients. Stir until combined and enjoy!
