Zucchini Bars

Low FODMAP as always, these chocolate chip zucchini bars will not disappoint! Happy Cinco de Mayo! It’s beautiful weather where I am, so I’m grilling and eating dinner with my awesome parents and fiancé 🙂

Ingredients

  • 3/4 cup brown sugar
  • 1/4 cup butter, softened
  • 1/2 tsp vanilla
  • 1 egg
  • 1 cup oats, pulsed in food processor to flour consistency
  • 1 tsp baking soda
  • 1/2 tsp xanthan gum
  • 1/2 tsp cinnamon
  • 1/2 tsp cloves
  • 1 cup zucchini, shredded
  • 1/2 cup dark chocolate chips, pulsed in food processor

Directions

In a food processor, pulse oats until the consistency of flour. Set aside. In a food processor, pulse dark chocolate chips into small pieces. Set aside. Mix sugar, butter, vanilla, and egg in a medium bowl. Mix in oat flour, baking soda, xanthan gum, and spices. Stir in zucchini and chocolate chips. Grease a square 8x8x2 pan. Spread batter in pan and bake 18-20 minutes at 350°. Enjoy!
